Gazpacho is a typical spanish recipe for a very hot summer seasons, it is prepared with fresh and raw vegetables, which are crushed without cooking. It is very refreshing before meal or like italian aperetivo or as a cold soup, an entree before meals.In addition to its refreshing taste, gazpacho is a very moisturizing dish, it provides electrolytes, needed for the body to recompose the loss of minerals produced by sweat. Becouse of its high water content, vitamin C, potassium, sodium,magnesium and antioxidants such as lycopene, it can be said gazpacho is a natural isotonic beverage.
1 kg of ripe tomatoes.
1 small green pepper (or pepper half if very large).
1 clove of garlic.
half an onion.
Optional: 2 slices of bread.
Preparation time: 15-20 minutes.
Healthy and refreshing gazpacho.
Optional: If we add bread recipe gazpacho, we will have to enter into a container with water while preparing the remaining ingredients.
First of all and as always, we wash all vegetables thoroughly.
Ripe tomatoes cut into 4 pieces and introduce them into the bowl of the mixer. If the glass is small, we can use a pan and do it with automatic hand blender.
Peel the cucumber and remove the ends. Cut it into pieces about 1 centimeter thick and add to the bowl of the mixer.
Then we remove the stem and seed the pepper, chop it and add it to the glass.
Also we peel and cut the onion, and add the remaining ingredients together.
Finally we take the garlic clove (removing the central part to not be as strong) and bread soaked in water (the latter is optional).
Finally add a pinch of salt, a glass of water, a little oil and a splash of vinegar, considering that it is always better to fall short at first and rectify later. Beat all ingredients into a homogeneous and had soup through a sieve with a spoon.
If too thick for your liking, you can you add a little more water.
If you want to get a creamier texture I propose to add a little mayonnaise, but will have to take into account the extra intake of calories involved.
For the garnish this gazpacho recipe, so you only have to cut the vegetables into small cubes whichever you prefer. It is also very typical add pieces of toast.
